why did my FRESH sweet potatoes turned out so white on Thanksgiving?

Q: I bought them fresh, peeled them, cooked them in a saucepan in water, mashed them and put them in a baking pan with seasonings, topped them with marshmellows...and THEY DIDN'T COME OUT ORANGE AS I've always had them come out before. My neice looked at them and said 'eeeeeeeeuuuuuuuu---what's THAT?'...we then had an unnecessary debate on yams & sweet potatoes (if they are the same or not)....but I never learned why they turned out so WHITE---good mind you, but PALE (not orange).

A: some stores label yams as sweet potatoes... yams are not as deep orange. as a bonus, i'm going to give you an OLD family recipe for candied sweet potatoes that does not involve marshmallows. boil sweet potatoes until soft when fork tested. cool, then peel skin off cut aprox 3/4" slices melt butter (real butter) and brown sugar in pan at low heat, whisk together until blended real well add sliced sweet potato and simmer, turning periodically until golden on both sides. if too runny, add more brown sugar. remove from heat and allow to cool a few minutes until butter/sugar mix thickens. arrange on pretty plate that showcases the color and listen to your family rave about how delicious.
