Q: Anyone else doing some Thanksgiving baking? I am making Paula Deen's Pumpkin Pecan Pie and a Pumpkin Gooey Butter Cake. My father has requested that I bring my famous cheese and chicken enchilada casserole - so that's next! I'm not sure when that got started, but one year he asked for ONE mexican dish along with all of the other traditional dishes...he likes my recipe best. I'm also bringing my famous homemade yeast rolls. Next year, it's at our house and I will be doing the majority of the cooking and baking! I'm enjoying my "time off" this year and just having to do a few things!
A: That casserole sounds yummy. I need to get started this year I am making a mint/choc pie and some brownies and the mashed potatoes but I have to do those tomorrow .I a not cooking as much as I would normally this year we are having a smaller meal.
