Q: Every year, we have leftover Turkey so we just put it in the freezer.We kept it frozen too long so the meat did not taste good anymore and we had to throw it away; i feel bad to waste food so i would like to know other ways to fix leftover Turkey from Thanksgiving.

A: I make turkey noodle soup, but I don't just use the meat, I use the whole carcass and make my own stock. Pull as much meat from the carcass as possible. Set aside in a dish. In a large stock pot, add in the carcass, and enough water to cover about two inches above. Heat until boiling, then reduce heat, cover, and cook on low for about 1-2 hours. Turn off heat, let cool on stove top (or outside if it's really cold). Remove carcass and discard. If you want to make the soup the same day, skim off the fat now. If you want next day soup, place entire pot in fridge, then skim fat off top when ready to use. Once fat is skimmed off, gently heat stock over low-medium heat. Add in vegetables, herbs, and seasonings. Once stock is hot, add in left over meat. Bring soup to a boil, add in your favorite noodles, a few handfuls. Boil until noodles are done cooking. Serve. This is my husband's favorite recipe, and the soup usually lasts us for several days, and that's after we've already had several days of turkey leftovers. You can also shred the meat, add BBQ sauce, heat, then serve on buns for pulled turkey BBQ sandwiches.
