Q:

A: You can make stuffing with vegetable broth (look for it in the natural foods section if it isn't in with the soup) and vegan margarine instead of chicken broth and butter. Now, start with plain breadcrumbs...your own or a bag from the grocery store. You can mash potatoes with a big blob of vegan margarine (try Willow Run or Earth Balance) and some soy milk (plain, please! Not vanilla or chocolate or anything.) Put in some garlic and herbs if you want. You can make sweet potatoes with nuts and maple syrup and vegan margarine and some soy milk (no eggs or evaporated milk, though.) You can saute' some onions and mushrooms in oil or vegan margarine and mix it with green beans instead of a casserole. Little pearl onions are a nice touch (very cute!) I like sauteed onions and squash--it doesn't have to be a big casserole. Glaze carrots with vegan margarine and maple syrup. Make sure they have enough salt...mmmm...glazed carrots. You can make broccoli with lemon or soy cheese on top (not both...ugh.) Thanksgiving sides are where it's AT. I wouldn't bother with the fake turkey...just put out a bunch of vegan sides and some bread, if you want. French bread is usually vegan. Also, try this question in Vegetarian/Vegan in Y!A.
