A: This year I'm doing a spiced beef instead..... Irish spiced beef.. one 4 pound bottom round roast (pot roast) 3 tablespoons tightly packed brown sugar 2 teaspoons cinnamon 2 teaspoons cloves 2 teaspoons allspice 1 teaspoon black pepper. mix sugar, spices, and pepper in a large bowl..pop the beef in and turn to cover completely in mixture...cover bowl & let sit in fridge 12 hours or overnight. Place beef in small dutch overn and add 1 and 1/2 cups of beef broth and one bottle of Guinness stout ( you can add a coarsely chopped onion and celery stalk for extra flavor).....put oven on 350 degrees farenheit, when the oven has reached temp put roast in, covered, and cook at least 3 hrs or until fork tender.........yummy when served with boiled potatoes, carrots & cabbage...and make sure you pour a wee bit of the braising juices over the meal....'tis a crime to waste anything with Guinness in it!..Happy St. Paddy's Day.
