I am wanting to do something for my parents on St. Patrick's day, but I don't know what I should do. Please He

Q: I want it to be something cool that they would enjoy, but also something that is nice and romantic. I also want it to be a SURPRISE!!!!If you have any recipes or fun decorating tips or something like that. I am thinking about having them go do something for a while and when they come back dinner is on the table for them or something like that. But I need lots and lots of ideas. If everyone that reads this reply back with something nice and an idea.

A: How sweet! :-) Dinner would be a decent idea, and there are actually some pretty nice Irish dishes that would be good for a "quiet dinner for two". Something with salmon is a good choice -- there's an Irish myth about a hero named Finn McCool who ate a magic "Salmon of Wisdom" when he was just a boy and that's how he became wise, and so salmon has an association with Ireland; plus, it'd be fairly easy for you to make. There are also some fairly simple and quick-to-prepare potato dishes -- there are a ton of recipes for something called colcannon, which is mashed potatoes with either cooked cabbage or broccoli mixed in, spread into a casserole dish, then topped with cheese and baked until the cheese melts. There's also Irish stew, and you can find a TON of recipes for that -- the basic recipe involves lamb, potato, and carrots. There's a traditional soup with leeks and oatmeal called "Brotchan foltchep", which you can also find a lot of recipes for, and would fit with salmon pretty well (a dinner of salmon fillets or salmon steaks, with some brotchan foltchep or colcannon on the side, would be lovely). Some kind of little apple tarts or apple crisp would work for dessert, or something I just found called "Apple Snow", which sounds kind of like an applesauce mousse. If you have any berries, a fruit fool would also be a traditional and super-easy dessert: puree a couple handfuls of berries in a food processor with a little sugar, whip up some heavy cream into whipped cream, carefully fold the cream and the berry puree together and then stir in a few more whole berries; serve in pretty glass bowls. (If you use blueberries, adding a sprinkle of cinammon as well really works.) Good luck!
