Q: What is St. Patrick's day celebrating ?

A: Well, the easy answer is that it celebrates St. Patrick, the patron saint of Ireland. In practice, in the U.S. it has become also a celebration of Irishness itself--music, literature, the history of Irish immigration, etc. Some people I've heard even have been known to have a glass of Guiness stout or an Irish coffee on that day.
