Q: M daughter is allergic to wheat/ gluten and corn. I am wanting a gluten free bread that she can have for Passover. I know I can look up recipes online but I would like to hear what breads people have made and actually tried. The simpler the recipe the better but I would also like it to be good. Our whole family will be eating gluten free. Any other tried and true recipes for gluten free Passover dishes will be greatly appreciated. Another not- she is allergic to eggs so unless an egg replacer will work well in any recipe htat calls for eggs, we wont be able to use it sorry- missed typos looking for Gluten Free Passover recipes I know there is not supposed to be yeast for Passover- ironically- she is allergic to yeast also! A: I asked a friend with a husband who can't eat gluten what she does for matzoh. Here is her recommended recipe. While I can't say that I have personally tried it, she says it works and that it tastes good, and I trust her food opinions. GLUTEN-FREE PESACH MATZOH SUBSTITUTE Makes approximately 16 2 to 2 1/2 inch round crackers. 4 oz. potato flour [starch] 2 oz. ground almonds (you can use almond pieces ground fine in a food processor or blender) 2 Tablespoons olive oil 4 Tablespoons water (keep 2 teaspoons water in reserve) pinch of salt Preheat the oven to 450 degrees. Combine the potato flour, ground almonds and salt. Mix the olive oil and water (minus the 2 teaspoons reserved water) in a bowl, sprinkle on top of the dry ingredients, and use a fork to mix to a dough (if it seems too dry, add the remaining water). Knead and form into a ball (if at all sticky, dust the board with a little potato flour) and roll out slightly thicker than matzah. Cut into 2- to 2 1/2-inch rounds. (A water glass can be used to make the cuts.) Prick all over with a fork and bake at 450 degrees for 10 minutes or until light brown. Enjoy your Passover and good luck!!
