Easy kosher easter dinner?

Q: I'm having friends over for an easter dinner on Sunday, however its still Passover (I'm jewish) , so I'm limited on what I can make. Does anyone have any suggestions, reciepes for an Passover-Easter dinner?

A: If you make any dinner that is Kosher for Passover, it will work as an Easter dinner as well. Roast a chicken or turkey. Skip the stuffing, or make matzoh-meal stuffing. (Look for matzoh farfel in the store; there will probably be a recipe on the back.) Obviously, bread or rolls are not on a Passover menu. Serve vegetables and/or a salad on the side, and avoid any milk products, butter, or margerine that isn't labeled pareve. If you can't get pareve margerine, don't serve baked or mashed potatoes, because many people will expect to have butter or sour cream on them. Rice is a little tricky as well. Most American Jews are of Ashkenazic (Eastern European) descent, and Ashkenazic Jews do not eat rice on Passover So you are better off with just green vegetables. Asparagus is in season, and that's always special. Otherwise, get any vegetables your friends would like--carrots, broccoli, or whatever. Be especially careful about desserts, which often have butter, cream, or some such. If you cannot find an appropriate dessert, just offer fruit and Passover sweets, like macaroons or Kosher for Passover candies. Commercial Passover "cakes" tend to be pretty lame, so unless you are prepared to bake for yourself, you might be better off going that route anyway. Good luck!!
