Why do we not work on Saturday and Sunday (typically anyway)?

Q: In other words, who made Mon-Fri the work week?

A: Sunday was the traditional day off (the Christian Sabbath) and by the middle 1800's, it became customary for a lot of places to let workers knock off early on Saturday. When unions came in, they pushed for more time off and the early-closing Saturdays got extended to a full day off.
